How to make it

  • Thinly shave meat with a sharp knife.
  • Start browning
  • after 3 or 4 minutes add veggies and garlic
  • saute until veggies are very soft slightly caramelized
  • add spices and continue a few more minutes cooking
  • add tomato sauce or ketchup and a little water
  • simmer for 10 minutes
  • divvy the meat mixture into 4 servings
  • simmer the enchilada sauce (1 can) w/ some butter
  • place meat mix onto tortilla, add some cheese
  • roll tightly, crimping the ends as you go
  • slowly saute in some butter over LOW heat
  • spoon some enchilada sauce onto plate and place rolls
