Ingredients
  • 3 -4 medium Yukon gold potatoes
  • 1 tsp sea salt
  • 1/4 cup Hellmann's Mayo
  • 2 fresh Fooled Ya JalapeÅ„os (These look like jalapeÅ„os, but are very mild .. use a mild green chili as a substitute)
  • A handful of fresh cilantro , about 1/3 cup chopped
  • 3 green onions , chopped
  • 2 TBSP fresh squeezed lime juice
  • 1-2 cloves garlic, minced
  • 1/2 tsp black pepper
  • 3-4 slices of bacon, crumbled

Directions
  1. Cook Potatoes and 1 tsp salt in boiling water to cover in a large dutch oven about 15 minutes or until fork tender. If you didn't cut potatoes before cooking, now cut into chunks...better to leave bigger.
  2. drain potatoes and chill awhile before attempting to mix.
  3. Stir together mayo , peppers, cilantro, onions, lime juice and black pepper.
  4. Add chilled potatoes, toss to coat.
  5. Cover and chill several hours.
  6. Stir bacon in just before serving
  7. Add more salt to taste
  8. Garnish with more cilantro blend
  9. You can eat immediately, but the chilling allows the flavors to blend.
