Cilantro Potato Salad

- 3 -4 medium yukon gold potatoes shopping list
- 1 tsp sea salt shopping list
- 1/4 cup Hellmann's Mayo shopping list
- 2 fresh Fooled Ya Jalapeńos (These look like jalapeńos, but are very mild .. use a mild green chili as a substitute) shopping list
- A handful of fresh cilantro , about 1/3 cup chopped shopping list
- 3 green onions , chopped shopping list
- 2 TBSP fresh squeezed lime juice shopping list
- 1-2 cloves garlic, minced shopping list
- 1/2 tsp black pepper shopping list
- 3-4 slices of bacon, crumbled shopping list
How to make it
- Cook Potatoes and 1 tsp salt in boiling water to cover in a large dutch oven about 15 minutes or until fork tender. If you didn't cut potatoes before cooking, now cut into chunks...better to leave bigger.
- drain potatoes and chill awhile before attempting to mix.
- Stir together mayo , peppers, cilantro, onions, lime juice and black pepper.
- Add chilled potatoes, toss to coat.
- Cover and chill several hours.
- Stir bacon in just before serving
- Add more salt to taste
- Garnish with more cilantro blend
- You can eat immediately, but the chilling allows the flavors to blend.
