How to make it

  • Cook Potatoes and 1 tsp salt in boiling water to cover in a large dutch oven about 15 minutes or until fork tender. If you didn't cut potatoes before cooking, now cut into chunks...better to leave bigger.
  • drain potatoes and chill awhile before attempting to mix.
  • Stir together mayo , peppers, cilantro, onions, lime juice and black pepper.
  • Add chilled potatoes, toss to coat.
  • Cover and chill several hours.
  • Stir bacon in just before serving
  • Add more salt to taste
  • Garnish with more cilantro blend
  • You can eat immediately, but the chilling allows the flavors to blend.
