Spinach Cheese Polenta Recipe
From a friend back at college. Very versatile, can add ingredients as you like.

Ingredients
  • 4 cups water
  • 1 t salt
  • 1 cup ground yellow cornmeal
  • 1/2 cup milk
  • 1 bunch spinach
  • 1 - 1 1/2 cup grated parmesan (or your favorite cheese)
  • 1 1/5 t pepper

Directions
  1. Preheat oven to 400
  2. Rinse spinach, chop coarsely
  3. Boil water
  4. Pour boiled water over cornmeal
  5. Pour into small, glass baking pan
  6. Stir in spinach & cheese
  7. Bake for 30 minutes
  8. Can be eaten fresh from oven, served at room temperature or chilled
