Tomato Soup

- 1kg tomatoes ( roma if possible) skins removed shopping list
- 4 Tablespoon olive oil shopping list
- 2 gloves garlic, finely chopped shopping list
- 2 medium onions, coarsely chopped shopping list
- 2 Tablespoon tomato paste shopping list
- 2 bay leaves shopping list
- 2 chicken stock cubes small, crumbled shopping list
- 350ml water shopping list
- 1 Teaspoon whole peppercorns shopping list
How to make it
- TO remove skins place tomatoes in a large pan of HOT water for a minute or two then place in icy cold water, the skins will easily rub off.
- Heat oil in a large saucepan. Add onion & garlic, stir over heat for 3 minutes.
- Add tomatoes then remaining ingredients.
- Bring to the boil, reduce heat cover, and simmer for 25 minutes.
- Discard bay leaves; blend or process mixture.
- Soup can be made up to 2 day ahead; keep covered in refrigerator. Soup can also be frozen for 2 months.
