How to make it

  • TO remove skins place tomatoes in a large pan of HOT water for a minute or two then place in icy cold water, the skins will easily rub off.
  • Heat oil in a large saucepan. Add onion & garlic, stir over heat for 3 minutes.
  • Add tomatoes then remaining ingredients.
  • Bring to the boil, reduce heat cover, and simmer for 25 minutes.
  • Discard bay leaves; blend or process mixture.
  • Soup can be made up to 2 day ahead; keep covered in refrigerator. Soup can also be frozen for 2 months.
