Ingredients
  • 1kg tomatoes ( roma if possible) skins removed
  • 4 Tablespoon olive oil
  • 2 gloves garlic, finely chopped
  • 2 medium onions, coarsely chopped
  • 2 Tablespoon tomato paste
  • 2 bay leaves
  • 2 chicken stock cubes small, crumbled
  • 350ml water
  • 1 Teaspoon whole peppercorns

Directions
  1. TO remove skins place tomatoes in a large pan of HOT water for a minute or two then place in icy cold water, the skins will easily rub off.
  2. Heat oil in a large saucepan. Add onion & garlic, stir over heat for 3 minutes.
  3. Add tomatoes then remaining ingredients.
  4. Bring to the boil, reduce heat cover, and simmer for 25 minutes.
  5. Discard bay leaves; blend or process mixture.
  6. Soup can be made up to 2 day ahead; keep covered in refrigerator. Soup can also be frozen for 2 months.
