This recipe is one I tried to re-create from a dish I had at the Hard Rock Cafe in Melbourne Australia, It is a favourite in our family

Ingredients
  • 2 single Chicken breast
  • 3x Chorizo sausage – sliced
  • 400g Penne pasta
  • 50g Butter
  • 150g Parmesan cheese – grated
  • 50g extra Parmesan cheese – grated
  • 150ml Milk
  • 150ml Cream
  • 3x tomatoes – deseeded & diced
  • Baby spinach
  • Salt & pepper
  • Parsley - chopped

Directions
  1. Char grill chicken & sausages. (Slice chicken before serving)
  2. Cook pasta as packet directions
  3. Place butter, milk & cream in a pan over low heat until butter is melted & well combined, remove from heat add parmesan cheese, salt & pepper stir until blended & smooth.
  4. Drain pasta, toss with baby spinach leaves & chorizo sausage mix through creamy sauce.
  5. Add tomato, Plate up pasta, top with sliced chicken, sprinkle with extra parmesan & parsley.
