Tuna Saltado

- 1 lb long grain white rice shopping list
- 7 oz. tuna in water,,,drained shopping list
- 5 regular sized potatoes cut in slices (like fryed potatoes) shopping list
- 1/3 cup oil shopping list
- 3 small tomatoes or 2 large ones sliced in wedges shopping list
- 1 purple onion sliced in wedges shopping list
- about 1/3 cup of cilantro (cut finely) more of less, depends on your like for cilantro shopping list
- 2 T. (or less depending on your taste) Tablespoons of cumin (i use the ground kind,,,Mc Cormick) shopping list
- dash of salt and pepper shopping list
How to make it
- Pour oil about 1/2 inch deep in frying pan
- Cut up potatoes and when oil is hot place them one row at a time in oil and turn until crispy. When done, take out and put on a paper towel.
- Continue to cook all potatoes like that.
- Prepare the Rice as the package instructions tell you.
- After the potatoes are done, drain all the oil from pan except for enough to cover the bottom of pan.
- Add your cut up purple onion and cook for about 2 min.
- Then you add your cut up tomato, cilantro, cumin and salt and pepper.
- Stir in your Tuna.
- When it is all mixed together good, Add your potatoes and toss around.
- To serve: Place the Tuna Saltado on or beside the white rice.
- Enjoy.

This looks very nice and interesting. Do you use that amount of cumin? that is so much... do you mean table spoon or tea spoon? And another question, is it powder or seeds?
You have my 5, I love all the flavors in this recipe.gourmetana in London loved it -
I think I might go with the tsp for the cumin, but is does sound good.
