Ingredients
  • 2 lb lean beef, diced
  • 2 T flour
  • 2 T butter
  • 5 c beef stock
  • 1 c pale ale
  • 1 t salt
  • 1 t dried marjoram
  • 1/2 t dried mint
  • 2 c chopped fresh spinach
  • 1 lb asparagus, cleaned, snapped & chopped into 1 inch pieces
  • 1 t sugar
  • salt & pepper to taste

Directions
  1. dredge beef in flour
  2. melt butter in a large saucepan over medium heat
  3. brown beef on all sides
  4. add the stock, ale & salt
  5. bring to a boil
  6. reduce heat and simmer, covered, for 30 minutes
  7. add marjoram, mint & spinach
  8. bring to a boil again then reduce heat
  9. add asparagus and simmer until tender- about 4-5 minutes
  10. stir in sugar & season as needed
  11. serve hot
