Southern Summer Squash Casserole

- 2 cups sliced yellow summer squash shopping list
- 1 medium carrot, thinly sliced shopping list
- 1/2 cup chopped onion shopping list
- 1/2 cup diced red or green bell pepper shopping list
- 1/2 tsp salt shopping list
- 1/8 tsp black pepper shopping list
- 1/2 tsp cayenne pepper shopping list
- 1 can condensed cream of chicken or mushroom soup, undiluted shopping list
- 1 container(8ounces) sour cream shopping list
- 1 cup(4ounces) shredded Italian cheese blend(fat free) shopping list
- 1 cup shredded cheddar cheese shopping list
- 1 pkg.(6ounce) stuffing mix shopping list
How to make it
- Preheat oven to 350 degreeF. Combine squash,carrot,onion,bell pepper,salt, black pepper and cayenne pepper in medium saucepan; cover with water. Bring to a boil;cook 5 minutes or until tender; drain
- combine soup and sour cream in 13x9-inch casserole; mix well. Stir in vegetable mixture and spread evenly. Sprinkle cheeses on top.
- Top with dry stuffing mix. Bake, covered, 30 minutes or until heated through.
