Tasty And Easy Vegetable Broth

- 1 x diced onion shopping list
- 1 x tin of tomatoes shopping list
- 3 x cubed potatoes shopping list
- 3 x finely chopped carrots shopping list
- 4 sticks of celery chopped in to small pieces shopping list
- handful of red lentils shopping list
- handful of green lentils shopping list
- handful of white rice shopping list
- 2 x stock cubes shopping list
- 2 tablespoons of vegetable oil shopping list
- Bunch of flat leave parsley shopping list
- bay leave shopping list
- salt and pepper shopping list
How to make it
- This will probably make about 1.5 litres of soup and can be defrosted in single portions
- Heat the vegetable oil in the pot on a medium heat
- Add the onions and cook for 5 minutes
- Add the celery, carrots and potatoes and sweat for 5 - 10 minutes
- Add boiling water until it just covers the vegetables and add the stock cubes
- Add the tomatoes, bay leave, rice and lentils
- Bring to a boil, then cover and simmer on a low heat for 45-60 minutes stirring every 10 minutes topping with water when needed
- When the carrots and potatoes are very soft and the rice and lentils are fully cooked add a handful of chopped flat leafed parsley and simmer for 5 minutes
- Add plenty of black pepper and salt to taste
- Serve garnished with some parsley
