How to make it

  • This will probably make about 1.5 litres of soup and can be defrosted in single portions
  • Heat the vegetable oil in the pot on a medium heat
  • Add the onions and cook for 5 minutes
  • Add the celery, carrots and potatoes and sweat for 5 - 10 minutes
  • Add boiling water until it just covers the vegetables and add the stock cubes
  • Add the tomatoes, bay leave, rice and lentils
  • Bring to a boil, then cover and simmer on a low heat for 45-60 minutes stirring every 10 minutes topping with water when needed
  • When the carrots and potatoes are very soft and the rice and lentils are fully cooked add a handful of chopped flat leafed parsley and simmer for 5 minutes
  • Add plenty of black pepper and salt to taste
  • Serve garnished with some parsley
