Tasty And Easy Vegetable Broth Recipe

Ingredients

1 x diced onion

1 x tin of tomatoes

3 x cubed potatoes

3 x finely chopped carrots

4 sticks of celery chopped in to small pieces

handful of red lentils

handful of green lentils

handful of white rice

2 x stock cubes

2 tablespoons of vegetable oil

Bunch of flat leave parsley

bay leave

salt and pepper

Directions

This will probably make about 1.5 litres of soup and can be defrosted in single portions

Heat the vegetable oil in the pot on a medium heat

Add the onions and cook for 5 minutes

Add the celery, carrots and potatoes and sweat for 5 - 10 minutes

Add boiling water until it just covers the vegetables and add the stock cubes

Add the tomatoes, bay leave, rice and lentils

Bring to a boil, then cover and simmer on a low heat for 45-60 minutes stirring every 10 minutes topping with water when needed

When the carrots and potatoes are very soft and the rice and lentils are fully cooked add a handful of chopped flat leafed parsley and simmer for 5 minutes

Add plenty of black pepper and salt to taste

Serve garnished with some parsley
