Salsa Di Pomodoro For Potatoe Gnocchi Recipe
The tomato sauce made with Beatrice and Anna in my Florentine cooking class-goes with the potatoe gnocchi recipe.

Ingredients
  • 2 1/2 lb tomatoes-fresh or canned
  • 1 med onion
  • 2 stalks celery
  • 1 carrot
  • 1 bunch parsley
  • 1 bunch basil (a bunch means probably half a bundle like they sell in produce aisle)
  • salt and pepper to taste

Directions
  1. Wash ingredients thoroughly and chop everything except basil into large pieces.
  2. Cook for 40 minutes in a deep pan without a lid.
  3. Put through a food processor or blender, and then cook an additional 15 minutes.
  4. This time add salt, pepper, and finely chopped basil.
  5. Done! Toss with your gnocchi or pasta-or use on a pizza.
