How to make it

  • preheat oven to 180 c or 160c for fan forced bake tart crust for 15 minutes then remove and set aside
  • using an electric mixer beat ricotta ,cream ,sugar ,eggs and rind until smooth pour into pastry shell and bake for 30 minutes until set to the touch allow to cool on the bench then place in the fridge until cold
  • just before serving arrange strawberries over tart then tumble over the bluberries
