How to make it

  • Cut roast in half and place in a slow cooker; sprinkle with salt and pepper.
  • Combine the remaining ingredients; pour over roast.
  • Cover and cook on low for 4-5 hours or until a meat thermometer reads 160 degrees.
  • Let stand 10 minutes before slicing.

    I liked this recipe but as a general rule I do not use canned food in recipes. So in place of the can of whole cranberries, I cooked over medium heat in a meduim size pan 1/2 cup orange juice, 1/2 cup water, 1 cup sugar, & 3 cups of whole cranberrie. Brought to a boil, then simmered for 10-15 mins or until starting to thicken. I removed from heat added the honey, orange peel, clove, and nutmeg from above. Stirred until blended in the mixture and let stand for 5 mins. Then I took 1/3 of the mixture & added 1/2 cup water and blend together with my hand blender to create my injection sauce. I injected 1/2 to 1 oz of the sauce into 4 to 8 places of roast. Put the roast in the slow cooker and poured the remaining cranberry mixture over the roast and cooked as instructed. I got many great compliments on the roast. Thank you sharing your wonderful recipe. I ment to give it 3 forks but clicked too soon.
