A creamy broccoli soup with lots of cheese flavour and a hint of Tabasco.

Ingredients
  • 2 Tbs butter or olive oil
  • 1 onion chopped
  • 2 Tbs flour
  • 1 1/2 cup chicken stock
  • 3 cup chopped broccoli
  • dash salt
  • 2 Tbs parsley
  • 1/4 tsp pepper
  • 1 1/2 cup milk
  • 1/4 tsp tabasco sauce or more to taste
  • 1 1/2 cup grated cheddar cheese

Directions
  1. mix butter (olive oil) & onions in 12 C. microwave casserole
  2. cook at high 2 - 4 minutes until onion tender
  3. blend in flour & microwave 30 seconds, whisk in stock & broccoli
  4. microwave at high 8 - 12 minutes, stirring 2 or 3 times
  5. in blender purée mixture, add milk, cheese, salt, pepper & Tabasco (may need to blend a few batches)
  6. pour back into casserole, microwave 3 - 5 minutes to heat through
  7. let stand 5 minutes before serving
