This is my take on a recipe I saw in Living Without magazine--an excellent place to find inspiring recipes for people with food allergies. I added more fiber thus replacing some of the ingredients. These go fast so I make them in batches of 2 dozen.

I like Flax Seed in my Peanut Butter,don't beleive I have knowingly used Xanthan Gum,could you please tell me a bit about it? Love the sound of Almond Butter in this.

Xanthan Gum is used in gluten-free cooking to make up for the lack of gluten. It's pricey to buy--you only use a small amount with each recipe. If you can split it with someone all the better.
