Leftover Thanksgiving Day Casserole

- 1 1/2 lb. cooked turkey or chicken in chuncks shopping list
- 2 cups broth shopping list
- 1 cup whole grain rice mix (red, brown, pearled, black, wild, etc.) shopping list
- 1 can cream of mushroom soup (or other cream of soup) shopping list
- 3/4 cup shredded cheese, jack works good shopping list
- 1/2 cup peas shopping list
- 1/2 cup carrots shopping list
- 1 1/2 cup mashed potatoes shopping list
- 2 tbs butter melted shopping list
- 1/3 cup shredded cheddar cheese shopping list
- salt pepper to taste shopping list
How to make it
- Bring broth to a boil add rice and simmer for 45 minutes.
- Preheat oven to 350*F.
- In a casserole dish add bird, cooked rice, soup, 3/4 cup cheese,peas, carrots and salt and pepper to taste.
- Stir to mix everything and then pat down.
- Role the mashed potatoes into 1 inch balls and cover the casserole with them.
- Cover and bake in preheated oven for 40 minutes.
- Remove the casserole from the oven and turn up to broil.
- Brush the potato balls with melted butter, add a dash of salt and pepper, and then sprinkle on the shredded cheddar cheese.
- Return to the oven uncovered and broil for 5 - 10 minutes until cheese is browned and crusty (watch it it will burn).
- Let rest for 2 - 3 minutes to set up.
- Serve, eat, enjoy.
