A chicken and rice style casserole that can be made from leftovers.

Ingredients
  • 1 1/2 lb. cooked turkey or chicken in chuncks
  • 2 cups broth
  • 1 cup whole grain rice mix (red, brown, pearled, black, wild, etc.)
  • 1 can cream of mushroom soup (or other cream of soup)
  • 3/4 cup shredded cheese, jack works good
  • 1/2 cup peas
  • 1/2 cup carrots
  • 1 1/2 cup mashed potatoes
  • 2 tbs butter melted
  • 1/3 cup shredded cheddar cheese
  • salt pepper to taste

Directions
  1. Bring broth to a boil add rice and simmer for 45 minutes.
  2. Preheat oven to 350*F.
  3. In a casserole dish add bird, cooked rice, soup, 3/4 cup cheese,peas, carrots and salt and pepper to taste.
  4. Stir to mix everything and then pat down.
  5. Role the mashed potatoes into 1 inch balls and cover the casserole with them.
  6. Cover and bake in preheated oven for 40 minutes.
  7. Remove the casserole from the oven and turn up to broil.
  8. Brush the potato balls with melted butter, add a dash of salt and pepper, and then sprinkle on the shredded cheddar cheese.
  9. Return to the oven uncovered and broil for 5 - 10 minutes until cheese is browned and crusty (watch it it will burn).
  10. Let rest for 2 - 3 minutes to set up.
  11. Serve, eat, enjoy.
