Ingredients

1 pound lean ground beef (i use extra lean)

1 can beef broth (10 ounce)

1 can water

2 cups uncooked elbow macaroni

1 can cheddar cheese soup (10 ounce)

1 cup of chunky salsa (i use the mild el paso)

I like to add a chopped red onion, a sprinkling of thyme and basil to the ground beef while its cooking even though the recipe doesn't call for it. i have even added a can of mushrooms on occasion..but this was added at the very end.

Directions

Brown beef in a skillet (one that has a tight fitting lid.)

stir in broth and add water, heat to a boil.

add pasta and cook 10 mins, till tender. (i usually lower heat here and stir frequently as i find the pasta tends to stick to my skillet.)

mix in soup and salsa, heat through stirring often.
