If the pesto in the first bite doesn’t get you, surely the fresh mozzarella in the next bite will. The sun-dried tomato mayo (see recipe) just may put you over the edge. Hold on to your seat!

Ingredients
  • 2 Pounds Ground Pork
  • 1 Cup Spinach and Garlic Pesto
  • Sun-dried Tomato Mayo - see recipe at www.cookingwithcaitlin.com
  • 8 Rolls
  • 3 Packs Fresh Bocaccini (Mozzarella) Balls

Directions
  1. Combine all ingredients together and form 4 oz. burger patties.
  2. Stuff a lump of fresh mozzarella in the center of each patty.
  3. Grill 7-10 minutes, flip and then an additional 4-7 minutes.
  4. Place burger on a bun, smear sun-dried tomato mayo (see recipe at www.cookingwithcaitlin.com) on top of burger and serve.
