4 Bean Salad Cider Vinegar Dressing Recipe
Best if let sit overnight or at least a few hours. I take leftovers to work for lunch. Add some cubed cheese and meat (pepperoni, turkey breast) and it's a meal.

Ingredients
  • 1/4 C. cider vinegar
  • 3 tbsp. sugar
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1/2 tsp. dried parsley
  • 1/3 C. veg. oil
  • 1 can cut wax beans, drained and rinsed
  • 1 can cut green beans, drained and rinsed
  • 1 can kidney beans, drained and rinsed
  • 1 can garbanzo beans (chick peas), drained and rinsed
  • 3/4 C. chopped red onion
  • 1/2 C. chopped sweet red pepper
  • 1/2 C. sliced thin celery

Directions
  1. Whisk together first 6 ingredients in small bowl for the dressing. Set aside.
  2. Mix remaining ingredients in large bowl and toss with dressing. Let sit room temp. 2 hours or refrigerate overnight.
