Easy Cheesey Chicken Enchiladas

- 8 flour tortillas shopping list
- 2 cups or so of shredded chicken (boiled & shredded or rotisserie) shopping list
- 1 package cream cheese (room temperature is best) shopping list
- 1 cup or so of salsa (any kind is fine...can be hot, chunky or even corn and bean) shopping list
- 1 jar of mexican cheese dip (con queso) shopping list
- Shredded cheese to top shopping list
How to make it
- Preheat oven to 400 degrees
- Mix shredded chicken, cream cheese and salsa together
- Place 2 or 3 tablespoons of filling down the middle of each tortilla
- Roll tortillas up in place seam side down in casserole dish
- Cover all with cheese dip (or can use red sauce if you prefer)
- Sprinkle cheese over top
- Place in oven until heated through and cheese is bubbling on top
- Serve with sour cream
