Easy Cheesey Chicken Enchiladas Recipe
A wonderful alternative to spicy Mexican dishes

Ingredients
  • 8 flour tortillas
  • 2 cups or so of shredded chicken (boiled & shredded or rotisserie)
  • 1 package cream cheese (room temperature is best)
  • 1 cup or so of Salsa (any kind is fine...can be hot, chunky or even corn and bean)
  • 1 jar of mexican cheese dip (con queso)
  • Shredded cheese to top

Directions
  1. Preheat oven to 400 degrees
  2. Mix shredded chicken, cream cheese and salsa together
  3. Place 2 or 3 tablespoons of filling down the middle of each tortilla
  4. Roll tortillas up in place seam side down in casserole dish
  5. Cover all with cheese dip (or can use red sauce if you prefer)
  6. Sprinkle cheese over top
  7. Place in oven until heated through and cheese is bubbling on top
  8. Serve with sour cream
