Green Chile Enchiladas

- 1 1/2 lbs boneless, skinless, chicken breasts shopping list
- 2 cans green enchilada sauce shopping list
- 1 block of cream cheese shopping list
- 1 small can of green chiles shopping list
- 1 tbs cooking oil shopping list
- 1- 2 packages of Fajita sized flour tortillas shopping list
- 2-3 cups Mexican Blend shredded cheese shopping list
- 1/2 head of lettuce shopping list
- Small tub sour cream shopping list
- small tub of fresh or store bought guacamole shopping list
- 1-2 small tomatoes shopping list
- 1 can refried beans shopping list
How to make it
- Wash chicken breasts and chop into small cubes
- In large skillet, with a little bit of oil fry chicken breasts till done.
- Add the cream cheese and diced green chiles.
- Cook over med heat until cream cheese is melted and sauce has coated the chicken well.
- Remove from heat and set aside.
- Preheat oven to 350
- Spray with nonstick spray, a glass 9x13 baking pan.
- Open can of 1 GREEN Enchilada sauce, and taking one fajita at a time, spread a couple of tbs onto the tortilla.
- Add a couple of tbs of the chicken mixture and roll.
- Place them all in baking dish, seam sides down.
- Open second can and pour over the whole rolled enchiladas in your dish.
- Sprinkle cheese on top
- Bake in oven covered, loosely, for about 20 mins.( should be bubbly and tortillas should be firmed up) if needed bake for an additional 5-10 mins)
- Then for the last 5-10 mins remove foil to brown cheese till golden.
- Keep an eye on them so they dont get too over done.
- Chop lettuce into julienned slices, or a course grate.
- Dice tomatoes and set aside.
- To serve, plate the enchiladas over a bed of the shredded lettuce, on the side of that add some refried beans.
- Add a scoop of sourcream and gaucamole onto the beans and sprinkle with diced tomatoes.
- Enjoy!
