Hunan Pork Stir-Fry

- 1/2 lb boneless lean pork shopping list
- 2 tsp cornstarch shopping list
- 6 tsp lite soy sauce, divided shopping list
- 2 cloves garlic, minced and divided shopping list
- 3/4 cup water shopping list
- 1 tbsp cornstarch shopping list
- 1/8-1/4 tsp crushed red pepper shopping list
- 3 tbsp veg oil, divided shopping list
- 3 cups bite-sized cauliflowerets shopping list
- 1 med size green pepper, chunked shopping list
- 2 med tomatoes, cut into eighths shopping list
- Hot cooked rice shopping list
How to make it
- Cut pork across grain into thin slices, then into strips. Combine 2 tsp each cornstarch and lite soy sauce with 1/2 of the garlic in small bowl; stir in pork. Let stand 30 min. Meanwhile, combine water, 1 tbsp cornstarch, remaining 4 tsp lite soy sauce and red pepper; set aside. Heat 1 tbsp oil in hot wok or large skillet over high heat. Add pork and stir-fry 2 minutes; remove. Heat remaining 2 tbsp oil in same pan over med-high heat. Add cauliflowerets and remaining garlic; stir-fry 2 minutes. Add green pepper; stir-fry 3 minutes. Stir in tomatoes, pork and soy sauce mixture. Cook and stir gently until sauce boils and thickens. Serve over rice.
