This more of a decoration than something to eat. One would prepare it for Christmas and tear it down when xmas ends, i.e. January 13, at which time one throws a small party.

Ingredients
  • 2 1/2 dl brown sugar
  • 3/4 dl light syrup
  • 3/4 dl water
  • 150 g butter
  • 1 table spoon cinnamon
  • 1 table spoon ginger
  • 1 tea spoon cloves
  • 8 dl flour
  • 1 1/2 tea spoons bicarbonate

Directions
  1. All ingredients are available from organic farming and/or fair trade.
  2. With these proportions of spices it will be very mild.
  3. Double the dose for the real xmas feeling.
  4. Put the dough in plastic wrapping in a fridge over night.
  5. Make ca 4mm thick pieces
  6. But first you need to figure out the dimensions of the house, i.e. walls, windows, doors, chimney etc.
  7. Bake (175 degrees for ca 10 min) and let cool down.
  8. Should be brown, the trick is to the get the final product crisp so that it does not fall apart so quickly. Thick gingerbread cookies have a tendency to become soft ...
  9. Decorate with glazing and decorate with candies.
  10. 1 egg white
  11. 1 dl icing sugar
  12. juice from half a lemon
  13. Glue:
  14. Melt sugar in a pan big enough to fit the widest wall.
  15. Be careful, It is REALLY warm!
  16. Tear down the house when Christmas ends, i.e. on January 13. (tjugonde dag Knut).
  17. A bit more advanced version is to cut out windows before baking.
  18. When it is cool put in windows made of sheets of gelatin,
  19. glue with the molten sugar.
