Really easy chicken pasta salad, great for a side dish or for comfort food. My boyfriend and his room-mates love it!

Ingredients
  • 1 barbecue chicken
  • 500 g pasta spirals
  • 2-4 lemons depending on your taste
  • a few handfuls of fresh coriander leaves, finely chopped
  • about 2-3 T crushed /minced garlic
  • 4 cobs of cooked corn
  • 1 C olive oil
  • extra optional ingredients - cubed, roasted pumpkin or sweet potato, cubed fetta cheese, sundried tomato

Directions
  1. Put pasta on to boil.
  2. While this is cooking, shred barbecue chicken until you have all the boneless meat, cut into bite size pieces if not already so. If preferred, keep stuffing, break up into small pieces and reserve in a small bowl.
  3. Remove corn from cobs with a sharp knife and set aside with the chicken.
  4. When pasta has cooked, drain and set aside to cool.
  5. Prepare the dressing - in a bowl, combine minced garlic, olive oil, juice from the lemons and and coriander leaves.
  6. Combine chicken, stuffing, pasta, corn (and any other optional ingredients) and toss with salad dressing.
  7. Serve with fresh green salad. Makes a great side or good comfort food as a main.
