Ingredients
  • 3 (15 ounce) cans of black beans, rinsed and drained
  • 1 (16 ounce) regular can of diced tomatoes
  • 1/4 c. butter
  • 1 1/4 c. chopped onion
  • 4 cloves minced garlic
  • 1 tsp. salt
  • 1/2 tsp. freshly ground black pepper
  • 4 c. beef broth
  • 1 (15 ounce) can of pumpkin puree
  • 1/2 lb. chopped cooked ham
  • 3 tbsp. sherry vinegar

Directions
  1. Pour the 2 cans of beans in a processor, slowly add the tomatoes. You will blend until the mixture is smooth.
  2. Over medium heat, melt butter.
  3. Saute onions and garlic(until you smell the garlic)
  4. Add your salt and pepper(add pepper flakes for extra heat)
  5. Add the bean mixture, last can of beans, your beef broth, pumpkin mixture, and sherry vinegar.
  6. Blend this mixture completely.
  7. Simmer this for around 25 min.
  8. Right before serving, add ham, stirring completely.
