Pumpkin Black Bean Soup

- 3 (15 ounce) cans of black beans, rinsed and drained shopping list
- 1 (16 ounce) regular can of diced tomatoes shopping list
- 1/4 c. butter shopping list
- 1 1/4 c. chopped onion shopping list
- 4 cloves minced garlic shopping list
- 1 tsp. salt shopping list
- 1/2 tsp. freshly ground black pepper shopping list
- 4 c. beef broth shopping list
- 1 (15 ounce) can of pumpkin puree shopping list
- 1/2 lb. chopped cooked ham shopping list
- 3 tbsp. sherry vinegar shopping list
How to make it
- Pour the 2 cans of beans in a processor, slowly add the tomatoes. You will blend until the mixture is smooth.
- Over medium heat, melt butter.
- Saute onions and garlic(until you smell the garlic)
- Add your salt and pepper(add pepper flakes for extra heat)
- Add the bean mixture, last can of beans, your beef broth, pumpkin mixture, and sherry vinegar.
- Blend this mixture completely.
- Simmer this for around 25 min.
- Right before serving, add ham, stirring completely.
