Tuna Pasta

- 1/2 lb pasta( rigatoni works best) shopping list
- 1/2 bottle alfredo sauce( or any white sauce........12oz) shopping list
- 1 Can of 6oz tuna(light chunk, you can add one more can if you really like tuna) shopping list
- 1/2 cup frozen spinach(thawed) shopping list
- 1/4 cup green peas shopping list
- 3 sun dried tomatoes chopped thinly shopping list
- 1/2 cup wine(white or dry marsala) shopping list
- 1TBSP olive oil shopping list
- 1 clove garlic minced shopping list
- 1/2 red onion thinly sliced shopping list
- salt shopping list
- pepper shopping list
- red pepper flakes shopping list
- 1 tsp italian herbs shopping list
How to make it
- bring a pot of water to a rolling boil. italians say that the water you cook your pasta in must taste like the sea.....sooo add salt, enough to make your water salty.
- add your pasta and cook as suggested on packet
- meanwhile, bring a nonstick pan to med-high heat, add the olive oil, add garlic and saute for a few seconds.
- add the red onions and saute for another minute
- add tuna, and saute
- add peas, spinach and sun dried tomatoes, allow most of the liquid to evaporate
- add the wine to deglaze the bottom of the pan.
- to the alfredo sauce add a little bit of water, maybe 1/2 cup to thin out he sauce and add that to the pan. stir everything to mix well.
- drain your pasta, wash it thouroughly(it will be very salty), add tot he sauce and mix to coat everything well.
- add pepper and salt to taste, add the herbs and red pepper flakes
- serve piping hot with some crusty bread.........yummy!
- you can add more sauce if you like more sauce, just think it out a little bit
