- 12 large eggs shopping list
- 2 tbsp olive oil shopping list
- 1 tbsp butter shopping list
- 1 lb potatoes cut into a dice no larger than 1/2-inch shopping list
- 1 large onion, diced shopping list
- fresh chopped herbs; try thyme, maybe oregano, fresh cilantro on top perhaps, always flat-leaf parsley. Match the herbs to the ingredients you have on hand. shopping list
- salt to taste shopping list
- freshly ground pepper to taste shopping list
- 1 cup grated cheese (gruyere is a personal favorite) shopping list
- Any other ingredients you have on hand; try crumbled bacon, or leftover veggies. Anything really. shopping list
How to make it
- Preheat the oven to 350 degrees.
- Heat the olive oil and butter in a 10-inch frying pan with an oven-proof handle over medium heat.
- Add potatoes and onion and sautee until the onions are soft and potatoes are crispy, about 20 minutes.
- Add any other ingredients you like, making sure they are cooked through.
- Wisk together the eggs, herbs, salt, and pepper until well blended.
- Stir in the cheese.
- Pour the egg mixture over the onion and potato in the frying pan.
- Cook over medium heat 4-5 minutes until the bottom is lightly set.
- Place the frying pan in the oven and bake until the frittata is puffy and golden brown, 10-15 minutes.
