How to make it

  • Preheat the oven to 350 degrees.
  • Heat the olive oil and butter in a 10-inch frying pan with an oven-proof handle over medium heat.
  • Add potatoes and onion and sautee until the onions are soft and potatoes are crispy, about 20 minutes.
  • Add any other ingredients you like, making sure they are cooked through.
  • Wisk together the eggs, herbs, salt, and pepper until well blended.
  • Stir in the cheese.
  • Pour the egg mixture over the onion and potato in the frying pan.
  • Cook over medium heat 4-5 minutes until the bottom is lightly set.
  • Place the frying pan in the oven and bake until the frittata is puffy and golden brown, 10-15 minutes.
