White Bean Spread Or Dip

- 2 tsp extra-virgin olive oil shopping list
- 1/2 small red onion, chopped (about 1/2 cup) shopping list
- 2 cloves garlic shopping list
- Pinch of salt shopping list
- ground black pepper to taste shopping list
- 1 15.5 ounce cannellini beans or other white beans (about 1.5cups) shopping list
- 1/2 tsp chili powder shopping list
- 1/4 cup water shopping list
- 2 tbsp fresh basil or rosemary, or thyme or mint (can used dried, too) shopping list
- Note- I usually double this recipe shopping list
How to make it
- In a nonstick skillet heat oil over low heat
- Add onion and cook until soft, about 6 minutes
- Add garlic and cook until it starts to color, about 1-2 minutes
- Season with some salt and pepper
- Add onion mixture to the bowl of a food processor
- Add beans, chili powder, water, and more pepper
- Process until mixture become a slightly chunky puree
- transfer to a bowl and stir in herbs (can also process herbs w/ mixture if you prefer)
- Taste and adjust seasonings
