How to make it

  • Heat oil in a heavy skillet
  • Saute onion and garlic until transparent.
  • Add artichoke hearts, tomatoes, parsley, oregano and white wine
  • Salt and pepper; to taste
  • Cook slowly
  • stirring occasionally 15 minutes or until it reach a consistency you desire
  • Then add feta cheese; I am a cheeseoholic, I put in 3/4 cup.
  • Warm feta for 2-3 minutes
  • Remove from heat
  • Top your favorite piece of meat
