Lisas Veggie Dip Recipe
A different take on the same old dips. Serve as dip for chilled fresh beet, cucumber, celery, carrot, green pepper or turnip sticks. Cauliflowerets or green onions work well, too.

Ingredients
  • 1/2 small carrot
  • 1/2 small onion
  • 1/4 green pepper
  • a few sprigs of parsley
  • 2 Tbs vinegar
  • 1 cup mayonnaise
  • 1/2 cup Pot Cheese (or Farmer cheese, Ricotta or even cottage cheese, drained)
  • 1/4 tsp salt
  • 1/2 tsp curry powder

Directions
  1. Process all. Chill. OR..
  2. Chop first 4 ingredients very fine.
  3. Combine with remaining ingredients.
