The apricots add a tart-sweet flavor to an all-time favorite salad recipe.

Ingredients
  • Dressing Ingredients:
  • 1/3 cup Sour Cream
  • 1/4 cup nonfat plain yogurt
  • 1/4 cup frozen orange juice concentrate, thawed
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground nutmeg
  • Salad Ingredients:
  • 1 (16-ounce) package coleslaw mix
  • 3 to 4 fresh apricots, seeded, coarsely chopped
  • 1/3 cup chopped green onions

Directions
  1. Stir together all dressing ingredients in small bowl. Set aside.
  2. Combine all salad ingredients in large bowl. Add dressing to salad; toss to coat.
  3. NOTE: I always chill mine at least 2 hours prior to serving.
