This is a very healthy chocolate chip muffin that my VERY picky child gobbled up. Tastes wonderful warm when the chocolate chips are still gooey!

Ingredients
  • 1-1/2 cup whole wheat white flour
  • 1 cup oat bran
  • 1/2 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1/4 cup olive oil
  • 2 egg whites
  • 1 teaspoon vanilla
  • 1 cup mini chocolate chips

Directions
  1. Preheat oven to 400 degrees.
  2. Spray muffin pan with oil or put paper muffin liners in pan.
  3. Mix first 5 ingredients in a medium bowl.
  4. In a large bowl, whisk milk, oil, egg whites, and vanilla.
  5. Add dry ingredients to wet.
  6. Mix in chocolate chips.
  7. Bake in oven for 20 minutes or until inserted toothpick comes out clean (there may be chocolate on toothpick and this is ok. Just make sure that there is no batter on the toothpick too).
