How to make it

  • Boil Water
  • Wash and remove tips from greeen beans
  • Place beans steamer into water
  • Chop fresh spearmint and place to side (as much as desired)
  • Zest lemon (as much as desired)
  • Steam beans until semi-tender, but not soft
  • Remove beans from hot water and place in bowl of cold water
  • Place olive oil in saute pan and heat (medium)
  • Add beans, spearmint and some lemon zest
  • Continuously stir beans - do not allow to brown - only to reheat with the lemon and mint - a minute or two
  • Slice remaining lemon and add juice to beans
  • Serve
  • Garnish with lemon slices from un-zested lemon if desired

    Marvelous simple recipe. I just got my first green bean of the season in my CSA box and this will do them justice.
