Ingredients
  • 750 grams prawns
  • 1 tbs Chilly powder or cayenne powder
  • 1 tsp turmeric powder
  • salt to taste
  • oil for frying
  • Fresh Curry leaves washed and drained well

Directions
  1. Remove the shells from the prawns leaving the tentacles still attached.
  2. Devein the back of the prawns and wash with salt. Rinse of salt and drain.
  3. Add the chilly powder, turmeric and salt to taste.
  4. Give it a good mix ensuring that all the prawns are well marinated.
  5. Heat oil in a wok.
  6. When hot, drop prawns in one at a time and fry till tentacles are crisp.
  7. Remove and drain on a kitchen towel.
  8. Once all the prawns have been fried, drop the curry leaves and once splattering ceases, remove and drain.
  9. Serve the prawns hot with the crisp curry leaves as garnish.
