How to make it

  • Remove the shells from the prawns leaving the tentacles still attached.
  • Devein the back of the prawns and wash with salt. Rinse of salt and drain.
  • Add the chilly powder, turmeric and salt to taste.
  • Give it a good mix ensuring that all the prawns are well marinated.
  • Heat oil in a wok.
  • When hot, drop prawns in one at a time and fry till tentacles are crisp.
  • Remove and drain on a kitchen towel.
  • Once all the prawns have been fried, drop the curry leaves and once splattering ceases, remove and drain.
  • Serve the prawns hot with the crisp curry leaves as garnish.
