Ingredients
  • 1 yellow onion, chopped
  • 2 cloves chopped garlic
  • 1 chopped leek
  • 3 stalks chopped celery
  • 1 thinly sliced baking potato
  • 1 head chopped cauliflower
  • 1 tbsp. of vegetable oil
  • 2 c. of chicken broth
  • 1/4 c. of dry sherry
  • 1 tsp. of white pepper
  • 1 tsp. of black pepper
  • 1/2 c. of milk
  • 1 tsp. of salt
  • 1/2 c. of heavy cream
  • 3 oz. ofStilton cheese
  • 1/4 c. of chopped fresh parsley

Directions
  1. First you want to take the cauliflower and separate 3/4 c. placing them in a rolling boil pan.
  2. After around 3 minutes, take the cauliflower and rince under cold water.
  3. Now saute onion, garlic, leek and celery over medium flame.
  4. After around 5 min., add the potatoe, broth, the rest of the not cooked cauliflower, and the sherry.
  5. Let this boil then simmer over low flame until vegetables are tender.
  6. Now take your blender and pour the mixture in and blend.
  7. Once blended, transfer back to your pot over low flame.
  8. Pour in your milk and cream, using your fingers to break up the cheese.
  9. Let this get warm and ladle in bowls!
  10. Salt and pepper to taste.
