How to make it

  • First you want to take the cauliflower and separate 3/4 c. placing them in a rolling boil pan.
  • After around 3 minutes, take the cauliflower and rince under cold water.
  • Now saute onion, garlic, leek and celery over medium flame.
  • After around 5 min., add the potatoe, broth, the rest of the not cooked cauliflower, and the sherry.
  • Let this boil then simmer over low flame until vegetables are tender.
  • Now take your blender and pour the mixture in and blend.
  • Once blended, transfer back to your pot over low flame.
  • Pour in your milk and cream, using your fingers to break up the cheese.
  • Let this get warm and ladle in bowls!
  • Salt and pepper to taste.
