Cauliflower and Stilton Soup

- 1 yellow onion, chopped shopping list
- 2 cloves chopped garlic shopping list
- 1 chopped leek shopping list
- 3 stalks chopped celery shopping list
- 1 thinly sliced baking potato shopping list
- 1 head chopped cauliflower shopping list
- 1 tbsp. of vegetable oil shopping list
- 2 c. of chicken broth shopping list
- 1/4 c. of dry sherry shopping list
- 1 tsp. of white pepper shopping list
- 1 tsp. of black pepper shopping list
- 1/2 c. of milk shopping list
- 1 tsp. of salt shopping list
- 1/2 c. of heavy cream shopping list
- 3 oz. ofStilton cheese shopping list
- 1/4 c. of chopped fresh parsley shopping list
How to make it
- First you want to take the cauliflower and separate 3/4 c. placing them in a rolling boil pan.
- After around 3 minutes, take the cauliflower and rince under cold water.
- Now saute onion, garlic, leek and celery over medium flame.
- After around 5 min., add the potatoe, broth, the rest of the not cooked cauliflower, and the sherry.
- Let this boil then simmer over low flame until vegetables are tender.
- Now take your blender and pour the mixture in and blend.
- Once blended, transfer back to your pot over low flame.
- Pour in your milk and cream, using your fingers to break up the cheese.
- Let this get warm and ladle in bowls!
- Salt and pepper to taste.
