Ingredients
  • 1 cup cooked beets
  • 1 bouillon cube, beef or chicken
  • 1 small yellow onion, slicedin rings
  • 1 cup peeled, sliced baby carrots

Directions
  1. Dissolve bouillon cube in 1 cup boiling water.
  2. Add carrots and onions and simmer until vegetables are tender
  3. Blend beets in blender until smooth. Add beets to carrot and onion broth. Serve as soon as it is hot throughout.
  4. Do not overcook. The rich color that makes this soup fun to serve will turn a murky brown.
