Summer Squash Casserole with Nuts

- 1 pound of summer squash sliced shopping list
- 1/4 cup butter shopping list
- 1/4 cup chopped green bell pepper shopping list
- 1 tablespoon white sugar shopping list
- 1/2 cup chopped onion shopping list
- 1 egg shopping list
- 1/2 cup mayonnaise shopping list
- salt and pepper to taste shopping list
- 1/2 cup pecans,chopped shopping list
- 1/2 cup cheddar cheese, shredded shopping list
- 1/2 cup bread crumbs, cheese or crushed crackers. shopping list
How to make it
- Preheat oven to 350 dgrees
- Bring a large pot of water to boil. Add squash and cook until tender. Drain well.
- Place squash in a large mixing bowl, and add butter (reserving 1/2 tablespoon) to squash and mash well. Mix bell pepper, sugar, onion, egg mayonnaise, salt and pepper, cheese and nuts to mixture.
- Transfer the mixture to a 1 quart casserole dish.
- Top with bread crumbs and dot with the reserved butter.
- Bake at 350 degrees for 35-40 minutes.
