How to make it

  • Cube or shred your raisin bread
  • Use the butter to generously butter a medium, preferably ceramic, baking dish
  • Break the eggs and whisk them with the 1/2 cup of sugar
  • Add the salt and the five spice powder and incorporate them with the whisk
  • Add the first cup of milk and whisk until the mixture is evenly blended and you do not see streaks of whites and yolks
  • Pour the egg mixture onto the bread
  • Then pour the additional milk slowly onto the bread, and press on the bread gently with the back of a spoon so that it absorbs the milk, until the bread is almost covered with liquid
  • Sprinkle the reserved sugar over the top
  • Bake at 350 for 50-60 minutes, or until the pudding is pulled away from the sides of the dish and it appears well set
  • Serve with the syrup and the whipped cream
  • This will make 4 generous helpings
