Coconut Curry Potatoes and Chicken

- 6-8 chicken thighs, bone-in skinless shopping list
- 2 cans lite coconut milk shopping list
- 4 large potatoes (I do a mix of yukon and sweet) shopping list
- 1 can crushed tomatoes shopping list
- 3 tbsp curry paste (you can usually buy at desired spice level) shopping list
- 2 tbsp butter (real, good ol' butter, it won't kill ya) shopping list
- cilantro & lime for garnish shopping list
- serve with basmati rice and nan shopping list
How to make it
- Wash potatoes and cut into large chunks
- Place on bottom of slow cooker
- Wash chicken, pat dry and place on top of potatoes
- Pour coconut milk and tomatoes into slow cooker
- Add 3 tbsp curry paste and butter
- Stir to mix
- Cook on high for 4 hours
- If you can, stir occasionally and add more curry paste if you prefer more strength
- Serve with rice and nan
- You can also make a simple raita by mixing plain lowfat yogurt w/cucumber and tomato pieces
