How to make it

  • Wash potatoes and cut into large chunks
  • Place on bottom of slow cooker
  • Wash chicken, pat dry and place on top of potatoes
  • Pour coconut milk and tomatoes into slow cooker
  • Add 3 tbsp curry paste and butter
  • Stir to mix
  • Cook on high for 4 hours
  • If you can, stir occasionally and add more curry paste if you prefer more strength
  • Serve with rice and nan
  • You can also make a simple raita by mixing plain lowfat yogurt w/cucumber and tomato pieces
