This very flavorful curry slow-cooker dish is a great sunday dinner meal. Very satisfying. Also good for a crowd because easy to cook a big pot.

Ingredients
  • 6-8 chicken thighs, bone-in skinless
  • 2 cans lite coconut milk
  • 4 large potatoes (I do a mix of yukon and sweet)
  • 1 can crushed tomatoes
  • 3 tbsp curry paste (you can usually buy at desired spice level)
  • 2 tbsp butter (real, good ol' butter, it won't kill ya)
  • cilantro & lime for garnish
  • serve with basmati rice and nan

Directions
  1. Wash potatoes and cut into large chunks
  2. Place on bottom of slow cooker
  3. Wash chicken, pat dry and place on top of potatoes
  4. Pour coconut milk and tomatoes into slow cooker
  5. Add 3 tbsp curry paste and butter
  6. Stir to mix
  7. Cook on high for 4 hours
  8. If you can, stir occasionally and add more curry paste if you prefer more strength
  9. Serve with rice and nan
  10. You can also make a simple raita by mixing plain lowfat yogurt w/cucumber and tomato pieces
