Eggplant Soup

- 1 pound eggplant, diced shopping list
- 3/4 cup sliced carrots shopping list
- 3/4 c. of sliced celery shopping list
- 2 (14.5 oz.) cans of drained Italian diced tomatoes shopping list
- 2 (14 oz.) cans of beef broth shopping list
- 1 tbsp. of vegetable oil shopping list
- 1 medium chopped onion shopping list
- 1 lb. ground beef shopping list
- 1 clove of crushed garlic shopping list
- 1 tsp. of sugar shopping list
- 1/2 tsp. ground nutmeg shopping list
- 1 tsp. of salt shopping list
- 1/2 tsp. of ground black pepper shopping list
- 1/2 c. of dry macaroni shopping list
- 2 tsp. of chopped fresh parsley shopping list
- 1/2 c. of grated parmesan cheese shopping list
How to make it
- First, put some olive in a pot over a medium flame.
- Then saute the onion, beef, and garlic until meat is done.
- Next drain the grease from the meat.
- Now add the eggplant, carrots, celery, and tomatoes.
- Stir in the broth.
- Then you want to mix in the sugar, nutmeg, and salt and pepper.
- This needs to be heated through.
- Now you can add the macaroni and cook for approx. 12 min.
- Just before serving add in the parsley and parmesan!
