Ingredients
  • 1 pound eggplant, diced
  • 3/4 cup sliced carrots
  • 3/4 c. of sliced celery
  • 2 (14.5 oz.) cans of drained Italian diced tomatoes
  • 2 (14 oz.) cans of beef broth
  • 1 tbsp. of vegetable oil
  • 1 medium chopped onion
  • 1 lb. ground beef
  • 1 clove of crushed garlic
  • 1 tsp. of sugar
  • 1/2 tsp. ground nutmeg
  • 1 tsp. of salt
  • 1/2 tsp. of ground black pepper
  • 1/2 c. of dry macaroni
  • 2 tsp. of chopped fresh parsley
  • 1/2 c. of grated Parmesan cheese

Directions
  1. First, put some olive in a pot over a medium flame.
  2. Then saute the onion, beef, and garlic until meat is done.
  3. Next drain the grease from the meat.
  4. Now add the eggplant, carrots, celery, and tomatoes.
  5. Stir in the broth.
  6. Then you want to mix in the sugar, nutmeg, and salt and pepper.
  7. This needs to be heated through.
  8. Now you can add the macaroni and cook for approx. 12 min.
  9. Just before serving add in the parsley and parmesan!
