Seasoned Fried Fish Recipe
Traditional west indian way of Frying Fish. Spicy and finger licking. Spices can be adjusted to suit taste.

Ingredients
  • 8 flying fish fillet or mahi mahi or other types of steak fish
  • 1 Lime or Lemon
  • Salt
  • Bajan Seasoning (see my other submission for recipe)
  • 2 eggs (slightly beaten with a tea spoon of water)
  • 1/2 Cup Milk
  • 1 cup Flour
  • 1/2 cup bread crumbs
  • Oil for frying

Directions
  1. Place fish in lime Juice and salt for about 5 minutes
  2. Rinse fish
  3. Pat dry and rub the frying fish with the Bajan Herb Seasoning
  4. For the other types of fish make incisions in the fillets and insert with the seasoning
  5. In a bowl, mix the eggs and milk
  6. In a shallow plate combine the flour & the breadcrumbs
  7. Heat the oil in a frying pan
  8. Dip each fillet first in the flour mixture, then the egg mixture and again in the flour mixture - place in the hot oil in frying pan
  9. Remember that fish cooks quickly - so try not to overcook or it will be tough.
  10. When the fish turns brown usually it is finished
  11. Can be served with wedges of lime or lemon and parsley for decoration
