This is sized for two. It is easy enough for weeknights and can be served simply with salad. It is a tradtional and comforting meal.

Ingredients
  • 1 baby eggplant, peeled and cut into 1/4 in slices
  • 1 large egg
  • 1/2 cup seasoned dried bread crumbs
  • 3 tbsp grated peccorino romano cheese or parmesan
  • 1/2 cup shredded part skim mozzarella cheese
  • 12 oz prepared spaghetti sauce (approx 1/2 jar)
  • 2 cups whole wheat pasta
  • olive oil

Directions
  1. Preheat oven to 375F and grease a baking sheet with olive oil
  2. lightly beat egg in a shallow bowl
  3. mix bread crumbs and grated cheese on a sheet of wax paper
  4. dip eggplant in egg mixture then coat evenly with bread crumbs and arrange in one layer on baking sheet
  5. bake approx 25 to 30 min
  6. when about 5 min left for eggplant to bake, remove from oven and sprinkle with shredded mozz.
  7. replace in oven for remainder of cook time (2 to 3 min)
  8. arrange on cooked pasta and top with sauce
  9. goes great with garlic bread or a salad if eating healthy
