Eggplant Parmesan

- 1 baby eggplant, peeled and cut into 1/4 in slices shopping list
- 1 large egg shopping list
- 1/2 cup seasoned dried bread crumbs shopping list
- 3 tbsp grated peccorino romano cheese or parmesan shopping list
- 1/2 cup shredded part skim mozzarella cheese shopping list
- 12 oz prepared spaghetti sauce (approx 1/2 jar) shopping list
- 2 cups whole wheat pasta shopping list
- olive oil shopping list
How to make it
- Preheat oven to 375F and grease a baking sheet with olive oil
- lightly beat egg in a shallow bowl
- mix bread crumbs and grated cheese on a sheet of wax paper
- dip eggplant in egg mixture then coat evenly with bread crumbs and arrange in one layer on baking sheet
- bake approx 25 to 30 min
- when about 5 min left for eggplant to bake, remove from oven and sprinkle with shredded mozz.
- replace in oven for remainder of cook time (2 to 3 min)
- arrange on cooked pasta and top with sauce
- goes great with garlic bread or a salad if eating healthy
