How to make it

  • Preheat oven to 375F and grease a baking sheet with olive oil
  • lightly beat egg in a shallow bowl
  • mix bread crumbs and grated cheese on a sheet of wax paper
  • dip eggplant in egg mixture then coat evenly with bread crumbs and arrange in one layer on baking sheet
  • bake approx 25 to 30 min
  • when about 5 min left for eggplant to bake, remove from oven and sprinkle with shredded mozz.
  • replace in oven for remainder of cook time (2 to 3 min)
  • arrange on cooked pasta and top with sauce
  • goes great with garlic bread or a salad if eating healthy
