Fluffy Herbed Breadfruit Recipe

Ingredients

1 breadfruit, peeled and sliced

2 egg yolks, beaten

2 tbsp margarine

hot pepper to taste (optional)

1 tbsp finely chopped onion or chive

1 tbsp finely chopped parsley

2 egg whites, stiffly beaten

1/4 cup grated cheese

1/4 cup dry breadcrumbs

Directions

Boil breadfruit, drain and crush

Add beatenegg yolks, margarine, hot pepper, chive and parsley

Combine the above and beat by hand or electic beater

Fold stiffly beaten egg whites into breadfruit mixture

Turn into greased dish - combine the cheese and breadcrumbs

and sprinkle on top.
