Ingredients
  • 3 lbs. beef tenderloin
  • 1 qt. (32 oz.) Beef Stock
  • 1 cup dry red wine
  • 1 large onion, sliced thin
  • 2 tsp. dried marjoram
  • 4 garlic cloves, halved
  • 2 tbsp. corn starch (mixed in 2 tbsp. water)

Directions
  1. Combine stock, wine, onion, garlic & marjoram in a large plastic bag with meat
  2. Place in refrigerator for 2-4 hours
  3. Coat a large Dutch oven with cooking spray
  4. Brown meat
  5. Preheat oven to 400 degrees
  6. Put meat into roasting pan with marinade
  7. Bake for 45 minutes (until center is 160 degrees)
  8. To make sauce, place cornstarch mix in a bowl, whisk in hot marinade until sauce is thickened
