Creamy Cheese Mashed Potatoes

- 2 lbs. (about 5-6 medium) potatoes, peeled, cut into 1 inch thick chunks shopping list
- 1/4 cup (1/2 stick) butter or margarine shopping list
- 3/4 cup evaporated milk shopping list
- 1 cup (4 oz.) shredded cheddar cheese shopping list
- salt shopping list
- ground black pepper shopping list
How to make it
- Place potatoes in large saucepan
- Cover with water; bring to a boil
- Cook over medium-high heat for 15-20 minutes or until tender; drain
- Return potatoes to saucepan; add butter and evaporated milk
- Mash with potato masher, fork or hand-held mixer until smooth
- Stir in cheese
- Season with salt and pepper
- Note: chopped green onions, chopped parsley, chives or cooked, crumbled bacon may be added to mashed potatoes
