Chicken with black lentils and spinach

- 1 chicken, cut into 8 pieces shopping list
- 1/2 cup olive oil shopping list
- 2 medium onions, diced shopping list
- 500 grams spinach, washed shopping list
- 250 grams black lentils (can use green, but not red), washed shopping list
- Half a head garlic, peeled and sliced shopping list
- Handful fresh coriander, chopped shopping list
- coarse black pepper shopping list
- salt to taste shopping list
How to make it
- Heat the oil.
- Brown the onions.
- Add the chicken, garlic and coarse black pepper. Brown.
- Add the lentils and coriander. Cover with water. Cover the pot. When it boils, turn down the heat.
- After half an hour, add the spinach.
- Simmer until the chicken is ready. Cooking time should be about an hour. Note that wheat berries or whole rices may take longer, so if serving with those, start them first.
- Can replace the spinach with kale or any other tasty green leaf.
