Crockpot Enchilada Pie Recipe
This is a great mexican dish to make in your crock pot! The texture and combination of flavors created by the slowcooker is a winner :)

Ingredients
  • 8 corn tortillas
  • 10 oz cooked cut up chicken
  • 12 oz salsa
  • 1 cup cheese(can use any kind you like, I usually go with the mexican 4 cheese blend)
  • 1 can kidney beans

Directions
  1. If you have a round slow cooker you can use one tortilla, if it is more oval shaped layer two in the bottom. Atop tortillas pour some salsa, then kidney beans, then chicken, then cheese. Repeat as necessary. Top final tortilla layer with just cheese.
  2. I have a fairly new slowcooker so 3 hours on low is PLENTY however, the original recipe said up to 6 hours on low.
