This is my favourite recipe for Apricot Balls...

Ingredients
  • 500g dried apricots, very finely diced
  • 1 x 395g can sweetened condensed milk
  • 2 1/2 cups desiccated coconut
  • Extra coconut for rolling

Directions
  1. Combine all ingredients.
  2. Wet hands and roll mixture into small balls then coat in coconut.
  3. Refrigerate or freeze for later.
