Ingredients
  • 6 eggs, boiled and quartered
  • 8 rashers bacon, diced
  • 4 tomatoes, cut into wedges
  • 2 avocados, peeled and sliced
  • 200g lettuce leaves
  • 2 tablespoons fresh coriander leaves, finely chopped
  • 1 tablespoon extra virgin olive oil

Directions
  1. Fry bacon until crisp.
  2. Divide for 6 ingredients between 4 bowls and drizzle with olive oil.
  3. Serve immediately.
