Vegetarian Stuffed Mushrooms Recipe

Ingredients
  • 4 large portobello mushroom caps
  • 2 tbsp. olive oil
  • 11/2 tbsp. balsamic vinegar
  • 1/4 tsp. coarse salt
  • 1/2 tsp. black pepper
  • 1 1/2 cup chopped tomato
  • 1/3 cup chopped kalamata olives
  • 1 cup Italian bread crumbs
  • 1/2 cup shredded parmesean cheese
  • 1/4 cup fresh chopped chives

Directions
  1. Pre-heat the oven to 400 F
  2. Rinse mushroom caps and twist off stems
  3. Place mushrooms gill side up on a baking sheet, drizzle with oil and vinegar
  4. Season with salt and pepper
  5. Bake at 400 until caps are tender (about 10 min)
  6. Combine tomato, olives, bread crumbs, cheese, and chives in a bowl
  7. Mix with your hands until the mix reaches a soft but slightly crumbly texture
  8. Season with salt and pepper
  9. Divide mix evenly among caps, use hands to mold mix onto caps
  10. Bake 10-12 min
  11. Serve hot, with a green salad
